Our fast-growing distillery and elevated cocktail lounge is looking to complement our premium cocktail program with an equally-matched, inspiring cuisine offering. We’re looking for a Chef with natural culinary talent and a passion for creating unforgettable dishes that will complement our growing internationally-recognized spirit portfolio and cocktail program. We are an experience-driven venue focused on not only creating amazing memories for our guests, but also to elevate cocktail culture in Vancouver to new levels.

To be successful, you will be responsible for working with our creative team to develop new menu items that highlight the best of BC agriculture, meat, dairy and seafood, as well as range of international and ethnic dishes that play into the stories and flavours behind some of Copperpenny’s innovative spirits and liqueurs. Our goal is to deliver an irresistible small plates menu, evocative tasting boards, and fun tapas-style cuisine that will complement our seasonal drink menus, and create a draw for foodie audiences from around Vancouver and abroad in its own right. It would not be surprising to find a gin botanical-cured BC sourced salmon gravlax alongside a marinated Czech-style camembert beer cheese on the same menu.

The right candidate is a self-starter that will be able to work full-time with 2-3 flexible prep days per week plus afternoon/evening kitchen shifts Thursday, Friday and Saturday. In addition to our regular cocktail lounge service, we regularly run private events that may require additional scalability and logistics – so additional staff management and coordination will become part of the repertoire. Applicants should enjoy a fast-paced, dynamic work environment where everyone is expected to manage their own needs, while working in a friendly, tightly-knit team that always supports each other to maintain our positive company culture and deliver the best guest experience possible. We intend on becoming one of Canada’s 50 Best Bars because we believe BC has an amazing story to offer through unique regional food and amazing spirits – and Copperpenny is determined to be one of the shining lights in that story.

Duties & Responsibilities:

    • Oversee all kitchen operations, ensuring seamless service, quality control, and compliance with the highest standards of food safety and sanitation.
    • Develop seasonal menus in a timely fashion in conjunction with management and front of house team.
    • Create manuals and procedures and train FOH staff regarding best practices in preparing menu dishes, proper sanitation, and food safety.
    • Collaborate closely with management to achieve financial objectives, including effective budgeting, cost control, and inventory management.
    • Contribute to a positive work environment, though effective teamwork, and communication.

Requirements:

    • Proven hands-on cooking experience is required; a culinary arts degree is a bonus but not mandatory if creativity and proficiency can be demonstrated.
    • Excellent time management skills with the ability to multitask in a fast-paced environment.
    • Proven strength in menu development, planning and execution.
    • Willingness to learn and follow company procedure.
    • Proficient in hot and cold production in a Class 5 kitchen (no frying or grease-laden cooking)
    • A passion for the spirits industry, cocktail culture and exemplary customer service and guest experience
    • Competent with Excel or similar spreadsheet software (for budgeting & inventory control)
    • BC Food Safe Level One certification is required.
    • Class 5 Driver’s License and safe driving record an asset.
