Sundrop Pop cocktail made with Copperpenny Akvavit, served tall with a foamy top and colourful garnish beside the bottle.

Sun Drop Pop

Bright, juicy and built for a sunny afternoon, Sun Drop Pop takes Copperpenny Akvavit somewhere decidedly playful.

Fresh tangerine brings soft, fragrant citrus, while a little extra acidity gives it the snap normally provided by lemon or lime without covering up that unmistakable tangerine flavour. Orgeat adds a silky almond richness, and soda stretches everything into a crisp, sparkling highball.

The result is refreshing and easy-drinking, with just enough savoury character from the Akvavit to keep all that citrus from becoming too sweet.

Ingredients

  • 2oz (60 mL) Akvavit
  • 1oz (30 mL) Acidified Tangerine Mix
  • 0.5oz (15 mL) Orgeat
  • 3-4oz (90-120 mL) Soda water, to top
GLASSCollins or Highball
GARNISHTangerine Wheel or Tangerine peel
ICECubed Ice

Method

Add the Akvavit, tangerine acid mix and orgeat to a shaker with ice.

Shake briefly and firmly—about 8–10 seconds is plenty. Strain into a Collins or highball glass filled with fresh ice.

Top with chilled soda water and give the drink one gentle lift with a bar spoon to combine without knocking out the bubbles.

Finish with a thin tangerine wheel, or express a strip of tangerine peel over the top of the glass before dropping it in.

Copperpenny Tip

Shake first. Fizz second.

Never put the soda water in your shaker. Shake the Akvavit, citrus and orgeat first, strain over fresh ice, and add the soda last.

A gentle stir is all you need after topping—the more you fuss with it, the faster those bubbles disappear.

Tangerine Acid Mix

This is simply fresh tangerine juice sharpened with a little lime juice so it has enough acidity to balance the cocktail.

For a larger batch, just use 3 parts tangerine juice to 1 part lime juice and keep refrigerated until ready to use.

For one drink, combine:

  • 0.75 oz (22 mL) fresh tangerine juice
  • 0.25 oz (7.5 mL) fresh lime juice
