Lost Collins
The Collins is a classic for a reason: gin, fresh citrus, a touch of sweetness and plenty of bubbles. Lost Collins keeps that beautifully simple formula, but gives it a little more depth.
Copperpenny Lost Horizon Rare Tea Gin brings delicate tea aromatics and subtle tannin to the drink, while fresh lemon keeps it bright and cane syrup softens the edges. A generous splash of soda opens everything up into a crisp, refreshing highball.
Simple to make, dangerously easy to drink.
| GLASS | Collins or Highball |
| GARNISH | Lemon Wheel |
| PROCESS | Shaken |
Method
Add the Lost Horizon Rare Tea Gin, fresh lemon juice and cane syrup to a shaker filled with ice.
Shake firmly for approximately 8–10 seconds, just long enough to chill and combine.
Strain into a Collins glass filled with fresh ice, then top with 3–4 oz (90–120 mL) chilled soda water.
Give the drink one gentle lift with a bar spoon to combine everything without knocking out the carbonation.
Finish with a thin lemon wheel or express a strip of lemon peel over the top of the drink.
Copperpenny Tip
Cold soda makes a better Collins.
Keep your soda water properly chilled and add it only after shaking the rest of the cocktail.
Cold soda holds onto its carbonation better, meaning brighter bubbles and a livelier drink. And once it’s in the glass, stir gently—this isn’t the moment to show off your bar-spoon skills.
