An Ode to Summer Spirits – Night Blossom Gin
At Copperpenny Distilling Co. we pride ourselves on pushing the envelope on what botanicals we use in our batches of premium spirit. Our Night Blossom Gin is no exception. Capturing the eagerness of a British Columbian springtime, two varietals of local cherry blossoms handpicked under moonlight invigorate this ultra-small batch West Coast gin.
This limited-release run is exceptionally time-consuming and must be perfectly timed to maintain the freshness of our cherry blossoms. The distilling process starts in early March, with bottling only occurring at the latter end of May. Much like the sauce to our Caesars, we keep this gin close to the chest. All of Night Blossom’s botanicals are a distiller’s secret. It adds more mystique, don’t you think?
This gin is beautifully subtle, like the blossoms we carefully infuse – best appreciated with soda or a light tonic on ice or sipped neat (splash a bit of cold water to accentuate the flavours). At Copperpenny we see Night Blossom as the encapsulation of a liquid flower garden, made possible only by our relationship with local BC farmers.

We’re often asked what cocktails go best with our Gin, especially complex ones such as Night Blossom. It’s important to remember that cocktails aren’t an exact science, and you should experiment to see what flavours you like. Mix and match to your heart’s content!
Hotel Georgia
For the at-home bartender, this spirit pairs wonderfully with the “Hotel Georgia.” Named after the titular Hotel in illustrious Downtown Vancouver, this is an easy to make Cocktail that will impress any summer dinner party
- 2oz Night Blossom
- 1 oz Lemon juice
- 1/2 oz Orgeat (to taste)
- 1 dash of Ms Betters Orange Tree & Miraculous Foamer (or whisked Egg-White)
- Shake hard. Fine strain.
Best poured in a Coupe glass, but works just as well in any standard wine glass.
French 75
The French 75 is a classic easy-to-make cocktail that instills within you the sophistication of a socialite or French aristrocrat. Best served in a champagne glass this is a lovely flute of bubbly that is a great finisher to a dinner party or get-together.
- 1 oz Gin
- 1/2 oz Lemon juice
- 2 Dashes Simple syrup
- 2 oz Champagne
Nutmeg grated on top for some added spice and flair.

Palate: Robust spring bloom, hints of strawberry and almond.
